I forgot to mention in my previous post that my Chocolate Chip Muffins can easily be made into Double Chocolate Chip Muffins. (Sometimes I can't decide which to make and will just split the batch -- six regulars and six double chocolate -- the best of both worlds).
Simply add 2/3 cup of cocoa powder (what kind is up to you) to the dry ingredients. Then, I like to either a) add 1 tsp of cinnamon, instead of 1/8 or b) keep the 1/8 cinnamon and add 1/8 tsp instant espresso powder as well.
Whichever way you decide to go is up to you. The taste is wonderful, regardless. Just remember that a small amount of cinnamon and/or espresso powder really brings out the flavor of chocolate.
