Chocolate Chip Cherry Muffins

I bought two bottles of cherries for Thanksgiving, but have decided to stick with apple and pumpkin... so I figured I'd use them for my Chocolate Chip Cherry Muffins.

Ingredients: 

  • 2 cups self-rising flour
  • 1 tsp ground Allspice
  • 1 tsp cinnamon
  • 4 Tbsps ground almonds
  • 5 Tbsps brown sugar
  • 1 cup semi sweet chocolate chips
  • 1 cup sweet cherries, pitted
  • 2 eggs, lightly beaten
  • 6 Tbsps butter, melted
  • 2/3 cup buttermilk

Process:

1) Preheat your oven to 350 degrees F and dress a 12 muffin tin with liners and non-stick cooking spray.

2) In a medium mixing bowl, combine the first 3 ingredients.

3) Take two small bowls -- combine the chocolate chips and almonds in one and the cherries in the other. Add about a tbsp of the mix from the dry ingredients into each and make sure everything is coated. This keeps these ingredients from falling to the bottom of the liners when baking.

This is a very thick batter.
4) Add the eggs, butter and buttermilk to the dry ingredients and mix until just combined.

5) Add the chocolate chips, almonds and cherries and fold them in with a spatula.

6) Distribute batter evenly to baking cups. Bake 20-22 minutes.

  1. These look absolutely delicious! Just like many other recipes you have here! I think you need to experiment with chocolate and cayenne pepper powder. Cayenne has become a big part of my diet lately and I just can't get enough!

  2. Thank you. :) I've been meaning to try something like that. I wonder what I can come up with... hmm. Haven't done truffles in awhile. Maybe I can incorporate it that way. Thanks for the suggestion!
